Beyond your usual curry

Choosing a lamb curry: karahi, korma, spinach or coconut?

By Samway Grill · · 3 min read

If you know you want lamb, you have already made half the decision. The other half is the sauce. Samway’s lamb menu runs from spinach and garlic to coconut, cashew and tomato-based choices. Changing that part of the order can give you a different dinner without changing the ingredient you came for.

Lamb Karahi when you want tomato and peppers

Samway’s Lamb Karahi pairs lamb with bell peppers in a tomato gravy. If you like those flavours, it is a useful place to start. Bread makes sense beside a thick gravy: tear off a piece of naan, gather a little sauce, and keep going. Garlic Naan is one pairing to consider; Plain Naan is there if you want a simpler side.

Lamb Masala is a separate menu choice, so do not use the names interchangeably when ordering. Read the individual description in the lamb and seafood menu before you choose. Small differences in a name can point to a different dish.

Korma and coconut take different creamy turns

Lamb Korma is described with a creamy cashew sauce. Lamb Coconut Curry uses coconut milk and herbs. Both may appeal if you want a sauced lamb dish, but the flavour you are choosing is different. Think cashew for the first and coconut for the second, rather than treating them as two versions of one order.

Plain Rice is a straightforward partner for either because it leaves the sauce in charge. If you choose Coconut Rice with the coconut curry, you are deliberately repeating that flavour. That may be exactly what you want; if it is not, the rice and bread menu gives you other options.

Lamb Spinach puts the greens into the main

Lamb Spinach combines lamb with spinach and garlic. It is worth a look when you want to move away from your usual tomato or creamy sauce. You are changing the vegetable component of the curry as well as the flavour, which can make a familiar lamb order feel different.

For a shared table, you could put Lamb Spinach beside Chana Masala or a roasted appetizer. Or keep the order small and choose just the curry and the side you want with it. There is no requirement to add several mains simply because you are trying a dish for the first time.

Make one change at a time

If Lamb Korma is your regular order, try a different lamb curry with the same bread or rice next time. Keeping one part familiar makes it easier to notice what you like about the new dish. If the sauce is already your favourite part, keep it and experiment with the side instead.
